Waiters wear them mainly because they do not flop around. That would be quite a nuisance in many cases.

Bowties are smaller than there counterpart, the tie, but can work better in some cases. A bow tie shows off more of the shirt underneath. This allows for a better balance of black and white. Bowties are also less common than ties. This allows for a bit of variety. There is not shame in wearing a bow tie. Bowties can come in all sorts of colors. They are not limited to the formal black. Many people like to wear more festive colors. It can't catch on anything. This is why silk bowties are so smooth. And they shine for the same reason. This texture goes down to the microscopic level that is why it is so shiny. Bow ties in many ways are superior to ties in many ways.
